When searching for new Gluten-Free (GF), Dairy-Free (DF) recipe ideas I, of course, went straight to Pinterest. And boy did I find some great ones!!
I’m so excited to share this recipe with you today! I made it last Friday night for dinner and it was a HUGE success! (I’ve even enjoyed the leftovers for lunch this week!)
It’s called “All-in-One Dinner” dish. Well, that’s what I’m calling it at least. Pinterest didn’t have a name for it other than the ingredient list. So I named it, mostly for me, because I’m weird that way.
Here’s what you need (it’s pretty simple):
4-6 chicken breasts (fresh, thawed)
3-4 new (red) potatoes cut in quarters
green beans (I used frozen because that’s what I had, but fresh or canned is best)
Homemade Paleo Italian Dressing Mix
Put your chicken in a 9×13 pan. (We laid them at an angle down the middle.) Then add your new potatoes along one side and the green beans on the other. Sprinkle the Homemade Paleo Italian Dressing Mix over the top. Cover with foil and bake at 350o for 1 hour.
This recipe is great for those nights when you need something quick and simple!! It’s also a perfect dish to take to new moms, those recovering from surgery, a bereavement meal or just to bless a family with a yummy meal!
Serve alone, with some barbeque sauce – although it didn’t really need it, it sure is delicious or you could serve it with a nice dinner salad. It was one of my favorite meals so far in this new journey. And it didn’ t hurt that it was so easy to put together and make!
